Stocktaking in Liverpool

Liverpool has a notably large licensed trade relative to its size, and a strong independent convenience sector across Anfield, Walton and Toxteth. Much of our Merseyside work involves licensed premises changing hands, where cellar stock has to be valued accurately alongside the retail side of the business.

The Liverpool trade

Licensed premises make up a larger share of Liverpool instructions than in most comparable cities, so cellar counts, line cleaning allowances and draught stock valuation come up frequently. The docks and surrounding distribution estates also generate periodic warehouse inventory work.

Counting stock in Liverpool

More Liverpool jobs involve a cellar than in any other city we cover, and a cellar count is a different discipline from a shop count. Draught stock is measured rather than counted — part-emptied kegs gauged, line contents allowed for, and spirits weighed or measured to the part-bottle. That has to be done before service, which in practice means early morning starts. Retail counts across Anfield, Walton, Kirkdale and Toxteth are more conventional and run before opening. The dock estates and distribution sites along the north Liverpool waterfront bring periodic warehouse work, which is planned separately again.

When to book a stocktake in Liverpool

Licensed premises are counted on a repeating cycle rather than once a year — weekly or monthly, early in the morning before opening, so that yield and variance can actually be tracked. A single annual count of a bar tells you very little. Transfers of licensed premises are different again and are scheduled tight to the completion date, almost always at close of trade the night before, so that the cellar figure is current when funds move.

What a Liverpool count involves

Licensed premises make up a larger share of Liverpool instructions than in most comparable cities, so cellar counts, line cleaning allowances and draught stock valuation come up frequently. The docks and surrounding distribution estates also generate periodic warehouse inventory work.

In practice that means most of our Liverpool instructions are off licence stocktakers, business transfer stocktakers, convenience store stocktakers and warehouse stocktakers. We quote on your line count, not your floor area, and confirm the expected duration before attending.

Stocktaking in Liverpool — your questions

Do you value cellar stock in licensed premises?

Yes. Draught stock is measured in the cellar and valued alongside packaged and spirit stock, which matters particularly on business transfers of licensed premises.

Do you cover the Wirral?

Yes. Birkenhead, Wallasey and the wider Wirral are covered as part of our Merseyside area, along with Bootle, St Helens and Southport.

How do you measure a part-used keg or bottle?

Part-emptied kegs are gauged and spirits measured to the part-bottle rather than rounded to the nearest full unit. We also allow for the stock sitting in the lines. Rounding these is how a cellar valuation quietly drifts away from reality.

How often should a pub or bar be stocktaked?

Weekly or monthly. A single annual count tells you almost nothing about yield, because there is nothing to compare it against. Regular counts are what make variance and wastage visible while you can still do something about them.

Can you count a licensed premises on a transfer at close of trade?

Yes, and that is the usual arrangement. The cellar and the retail side are both counted the night before completion so the figure is current when funds move the next morning, and both appear on the same certificate.
